Hi Mike,
I am in the process of making my first wine. So far it tastes pretty good! But I have a question. I attempted to use up more of our grapes and can grape juice for my husband. But it turned out very very concentrated. I have 9 quarts of it put up. Do you think it will make good wine? Do you know how much concentrate would be needed to make 5 gallons of wine?
Thanks

When I first started building my business, my mentor told me my income would be an average of my 5 closest friends, which scared me to no end. What I learned is in order to be successful, you have to surround yourself with successful people. Mike is one of the most successful wine makers around. Just with the little info on sulfites changed my whole result in wine making. Before I was trying to fight it because I didn't want to use them. But, after listening to Mike, the five rules he speaks of is all about buiding relationships. With yourself, your wine making, your mind set and the results. In short, if your wine is the best, you get 100% credit for it. If it's terrible, you get 100% credit for that too! However, following Mike as my wine making mentor, I know I can't go wrong. Mike has saved many wine makers a ton a money. Mike, thanks again!

I am referring to frozen concentrates - not juice concentrates that you can get from a wine shop. Most of the concnetrates from a wne shop, i.e. kits, turn out very good.
If you are already in the secondary, you should just let it ride... Remember to let it spend about 8 months in the bottle.

wait.. when you say the juice concetrates aren't good, are you talking about the flavor or the alcohol content?

and if i've already started with the secondary fermentation stage, with the juice concentrate, can i still add the additional ingredients for flavors?

Great article on making homemade wine and adding flavor to it. Most sites just tell you to use grape juice. I've done that and it tastes like crap. Gotta try this new idea!
