		<description>Hi Mike,
Does adding sugar gives the wine a sweet flavor or will it be turned into alcohol? I added some sugar to the wine but it doesn&#039;t taste like it has any sugar added.
Btw, can i use citric acid instead of lemon to invert the sugar?</description>

		<description>Toby,
If its 5 gallons, 1 pack is plenty. What kind of juice matters as does the sugar content.

Grapes on the vine are tested to insure they are at their highest sugar content when harvested. The juice you have probably wasn&#039;t tested so you MUST measure the specific gravity to tell if you need to add sugar.

		<description>Toby,

It all depends on how much sugar the must already has and the only way to know that is to use a hydrometer. You want to add enough sugar to get the must up to 1.1 SG.

Grapes harvested in some of the finer vineyards have a sugar content of right at 1.1 when harvested so that juice doesn&#039;t need any sugar.

On the other hand, you may need to add 3 to 4 pounds for something like welchs concentrate.
Hope this helps!

		<description>Toby,

You have 2 options - and it depends on what you want to accomplish...

1) let the wine ferment till dry - i.e. - NO sugar is left to ferment. This can take as long as 3 months but if you like a dry wine, this is what you have to do. If you want to sweeten the wine after it has fermented all the way, then you had better add stabilizer or preservative BEFORE sweetening or you could restart the fermentation in the bottle resulting in the same thing - popped corks.

2) Let it ferment until still semi-sweet. In this case, a preservative is a MUST. Without it, the wine will continue to ferment in the bottle and you&#039;ll end up with popped corks.

Hope this helps!
